Ryan Chetiyawardana's Koji Hardshake cocktail is a classic at Dandelyan, which was crowned No.1 at The World's 50 Best Bars 2018. In the first of our Cocktail Stories series, we look at the history behind the drink.
The Koji Hardshake was developed by Ryan Chetiyawardana and Arielle Johnson, former head of R&D at Noma in Copenhagen as a modern riff on a classic whiskey sour, incorporating koji, the mould used in the production of miso and soy sauce.
